  • 2 cups of dark chocolate, which will be melted. Buy the kind without sugar and milk or an even amount of pure cocoa powder.
  • 4 eggs.
  • 2 heaped tablespoons of liquid stevia (unflavored and with a transparent color) or 100 grams of honey or agave syrup.
  • 1/2 teaspoon baking soda.
  • 2 handfuls of peeled and chopped nuts.
  • Optional: cinnamon, cardamom, ginger, vanilla essence.

Explanation

The preparation is extremely easy and very fast. You should follow these steps:

  • Preheat the oven to 180 degrees Celsius.
  • If you’re using chocolate to melt, you’ll need to do it au bain marie (put the chocolate in a bowl or small saucepan in a larger pan filled with water and heat it).
  • Beat the eggs and add the chickpeas. You should whisk everything until it has a very fine texture. It will go a lot faster if you have a blender or food processor.
  • Add the baking powder and sweetener you have chosen.
  • Finally, add the melted chocolate or cocoa and the chopped nuts.
  • If you want you can add a spice to hide the chickpea flavor even more, but this will already be done by the chocolate. You can also personalize it for a different taste by adding a bit of cinnamon, cardamom, ginger, vanilla essence, orange zest etc.
  • Prepare the cake tin. Coat the baking pan with a thin layer of oil and flour to prevent the cake from sticking.
  • Put it in the oven and let it cook for 40 minutes at 180 degrees Celsius. Then take it out of the oven and let it cool.
